Yamagata / Junmai Ginjo Sake Brewery 'Jokigen' was established in 1947. It was formed by the collaboration of five sake breweries in Sakata. The president, Shoichi Sato, himself serves as the toji (master brewer), and the brewery produces 1000 koku (a traditional unit of sake volume). The name of the sake is derived from the wish that anyone who drinks this sake will become cheerful.
Fukushima / The Junmai sake Yume Kokoro is said to be 'never too flashy, with the flavor of rice as the top priority.' It is a beautiful Junmai Daiginjo with a taste of rice. Ibaraki / The Junmai Ginjo manufacturer is Raifuku Sake Brewery in Ibaraki Prefecture. This is a Junmai Ginjo super dry sake made with Hitachi Nishiki rice from Ibaraki Prefecture. It is a genuine super dry sake that can be considered an exception for Raifuku Sake Brewery, which tends to produce aromatic sake. The sharp taste, which minimizes aroma, pairs excellently with food. It can be enjoyed at your preferred temperature, from chilled to warmed, as a sake for meals.
Ishikawa / Among the Junmai sake of Kiku Hime, this type is relatively light and easy to drink. With a soft umami and smooth mouthfeel, it provides a gentle intoxication, making it easy to keep pouring more even if you intended to have just one cup.

'Hidakami Yasukazu' was born as a sake that pairs well with sushi. The entry is refreshing, and the sweetness is very creamy. The moderate acidity outlines a truly high-quality food sake. It has a smooth and three-dimensional flavor, but the finish is outstanding. The recommended sushi toppings are white fish, squid, and shellfish!
Hiroshima / Junmai Ginjo is carefully aged at low temperatures after pressing, resulting in a moderately rounded flavor. While a floral aroma wafts through, it also has the characteristic fresh sensation of Kamo Kinshu, and the taste continues to develop well after opening, making it a highly satisfying product.
