Our oysters are sourced from Hirota Bay in Rikuzentakata City, Iwate Prefecture, known for the miraculous lone pine tree. The neighboring town, Kesennuma City in Miyagi Prefecture, is one of Japan's leading fishing ports. These oysters, raised in a ria coastline, grow plump by consuming large amounts of phytoplankton. Our cooking method of 'steaming' brings out the unique creaminess of the oysters, their strong coastal aroma, and a rich, deep flavor.
