This is a carefully crafted beer using Japanese herbs such as yuzu and sansho. We offer three types: a white beer called Blanc, which has a mild bitterness and a fragrant aroma; a full-bodied Rouge with a strong alcohol presence; and a light Saison with an alcohol content of 6%.
Tenbi (Yamaguchi) Special Junmai - It has a very good balance and is the best food pairing sake that complements the dishes. The tokkuri (sake bottle) is 1000 yen.
Etsugai-jin (Kagawa) - Yamahai Junmai - Kame no O - A rare sake aged for one year using Kame no O, which is said to be a phantom sake rice. It has a firm acidity and smoothness, providing a gentle drinking experience.
Saku no Hana (Nagano) Junmai Daiginjo Hiyagoroshi Takane Nishiki - A refined and gentle umami that never gets tiresome. Oomine (Yamaguchi) Junmai Daiginjo Namazume Hiyagoroshi Omachi - A gentle aroma and soft, elegant sweetness; also recommended warm. Nito (Aichi) Junmai Ginjo Hiire Yamada Nishiki 55 - A refined acidity tightens the fruit-like sweetness beautifully. Kihou Tsur (Saga) Junmai Ginjo Tsumugi Yamada Nishiki Karakuchi - A fruity aroma and a clean finish that is pleasant. Machida Shuzou (Gunma) Tokubetsu Junmai Nigori Nama Gohyakumangoku - Creamy yet light and bubbly, making it easy to drink. Chiyo Midori (Akita) Junmai Muroka Nama Genshu Ayari 2-Year Aged - Light yet robust, this food-friendly sake has a smoothness from two years of ice temperature aging. Genbu (Nagano) Muroka Nama Genshu Aiyama - A rich and sweet sake that maximizes the goodness of Aiyama rice. Chuuai (Tochigi) Spec Not Disclosed - In fact, it is very high-spec, so I definitely want you to try it at least once! The tokkuri (sake bottle) is 1000 yen.
Eiko Fuji (Saga) Junmai Daiginjo Hiyadori, 4 years aged, with a ripe fruit aroma and a deep, gentle umami sweetness. Juji Asahi (Shimane) Junmai Hiyadori, Gohyakumangoku, a drinkable dry sake with a core flavor that even those who are not fond of warm sake should definitely try!
