At our restaurant, we focus on high-quality dashi that enhances the natural flavors of the ingredients. We select dashi to match each dish and offer a variety of umami experiences. Enjoy the unique techniques of a Japanese restaurant. ■ Dashi: We provide various umami experiences tailored to the ingredients. - Katsuobushi: We use carefully selected honkatsuobushi from Makurazaki. Freshly shaved katsuobushi is used in the restaurant, capturing the umami and aroma of bonito in the dashi. For the soup, we quickly extract a refined dashi to avoid any off-flavors, while for simmered dishes, we use a dashi that slowly brings out the umami. - Kombu: We select thick kombu from Rishiri, Hokkaido. We take our time to slowly extract the umami and sweetness of the kombu from water. - Hamaguri: The dashi from fresh clams produces a unique umami with a rich sea aroma and fullness, distinct from katsuobushi and kombu. ■ Ingredients: - Fish: We serve seasonal seafood as fresh as possible, sourced directly from fishing ports such as Miyazaki, Sado, and Awaji Island, bypassing the market. - Beef: We procure the most delicious cuts from a discerning meat wholesaler based on the season. *Please ask the staff about today's wagyu origin. Wagyu: Mainly from the inside thigh, it is tender red meat with almost no marbling. Kuroge Wagyu: A high-quality, rare cut known as 'tomo sankaku' with marbling.
