Haibou Sushi with Toro Taku, Sea Urchin, and Oscietra Caviar. To preserve the original seaweed and ingredients, it is not seasoned with salt or soy sauce. Haibou Sushi, also known as Bon and New Year.
A sharp acidity and saltiness, with a moderate firmness and hardness of the elegant rice. The rice is cut 2 to 30 minutes before serving the sushi, finishing it in optimal condition. The vinegar blend uses 'Yohei', which is not available for new transactions, pure rice vinegar with rich acidity and depth, natural salt from Noto, and a slight touch of sweetness from wasanbon sugar. The rice, with its moderate hardness and pronounced acidity and saltiness, enhances the umami of the ingredients.
