The tomatoes are carefully selected and stocked by a contracted wholesaler specifically for this restaurant. Furthermore, the olive oil used is exclusively 'Disanti' from Puglia, Italy, known for its rich aroma and versatility in flavor for cooking. Because it is simple, you can enjoy the differences in taste.
Despite being liver, it doesn't smell like liver; you can really feel the excellent craftsmanship! This is a dish you must try when you visit!

Produced in very small quantities, Yoshida Farm's Caciocavallo, crafted by Yoshida Zensaku, is a work of art that is rarely found in the market. This lightly sautéed dish is seasoned to perfection. It is delicious!
Authentic Roman Carbonara that does not use any fresh cream or milk. The rich sauce made from egg yolks, cheese, salt, and black pepper is exquisite.
This tomato cream sauce uses fresh sea urchin and fresh cream. The key is not to overcook it. A small amount of wine is added to reduce the strong flavor of the sea urchin, and it is lightly cooked to retain just the right amount of ocean aroma.
