Served as tataki, this is the local chicken from Chiran, Kagoshima. The 'Satsuma Chiran Chicken®' is raised for 450 days, which is 4 to 10 times longer than ordinary chickens, resulting in a significantly superior meat quality and texture compared to chickens raised for a shorter period. Because it is fresh, we can confidently serve it as a semi-raw tataki. Enjoy the crispy skin's fragrant flavor and texture, along with the sweetness of the red meat and the quality fat!
