Zabuton (also known as Hanishita) from Ishigaki Beef is the part of the shoulder loin that has the most marbling, combining the rich sweetness of the fat with the umami of the red meat.
It is characterized by fine marbling despite being lean. It has a strong flavor and is a popular cut for thin slices and steaks.
Ishigaki Beef Friend Triangle (also known as Hiuchi) is a cut from the inner thigh called Shintama, which has the highest marbling and a rich flavor.
This cut comes from the lower back to the buttocks, connected to the sirloin. Known as the queen of red meat, it is characterized by its high iron content and strong flavor.
