Fresh fish from Otubo Suisan, vegetables from Aoki Farm, San'emon pork, and sushi made with Ozaki beef, a rare Japanese beef... The manager himself visited the restaurant and carefully selected the ingredients, which were then delicately prepared. The passion of the creators and senders is reflected in the course, as well as the "deliciousness" of the ingredients.
We sublimate Ozaki beef and other carefully selected ingredients by visiting farmers and local wholesalers directly to create the restaurant's highest quality menu. We express "sophistication" by pursuing the beauty of the fat and the absence of cloying flavors. This restaurant is also available for dinners, anniversaries, and other special occasions.
The feed composition is changed according to the age and condition of the cattle on that day, and they are given spring water from a nearby ranch with clear air. This is Ozaki beef, raised in a completely non-stressful environment. Its characteristic is its low melting point. You will be impressed by the light and beautiful fat that melts away.
The sushi vinegar uses red vinegar from 'Yokoi Brewing', which boasts an 80-year history of vinegar making. It is said that there is no Edo-style sushi chef who does not know the highly trusted 'Yokoi's vinegar'. Unlike regular vinegar, red vinegar does not have a sharp acidity and has a mild flavor. After repeated trial and error, we have created a cohesive beef sushi.

It has a Japanese-style cutlet feel, but just a touch of the homemade balsamic sauce served on the side instantly gives it a Western flavor. The brand 'Shirakawa' is from Miyauchi Sake Brewery located in Aizuwakamatsu, Fukushima Prefecture. We are particular about rice; in the green areas of the Aizu Basin surrounded by mountains, rich water springs from clay layers. We use rice from Aizu and Fukushima Prefecture, known for its high nutritional value, as well as famous rice from outside the prefecture, and we mature the rice. The fertile land of the Aizu Basin adds richness and depth to the sake. This region, surrounded by mountains, not only has abundant spring water but also has an optimal balance of cold periods with few bacteria and periods with temperatures above 25 degrees Celsius, allowing the sake to gain richness and depth from summer to autumn. It has a refreshing melon aroma, and the taste spreads harmoniously in the mouth with the umami of the rice, finishing cleanly. Please enjoy!
