This grape variety Dral is a cross between Chasselas and Chardonnay, cultivated in the La Cote region of Vaud on the shores of Lake Geneva, and carefully selected and produced in the Morges and Nyon districts. It has a golden color with a glossy shine of yellow. It has a deep aroma with fruity, floral, and spicy notes. You can feel the fruity aroma of apricot, peach, and pear, the floral scent of white and yellow flowers, and the spicy aroma of nutmeg. The taste is refreshing and fruity, with a complexity that is felt. The sweet taste and acidity intertwine with the fruitiness, and the finish is long-lasting and enjoyable. Bottle 6,800 yen
Carefully selected grapes from the vineyard are used in wine making, combining traditional skills with modern techniques. Fermented in tanks for about 10 days to give a solid structure, bringing out sufficient tannins to express the strength of Pinot Noir. It has a deep ruby red color, with fruity aromas reminiscent of small red fruits and cassis. The taste is well-balanced with tannins, and the finish is long-lasting. Bottle price: 6,800 yen.
Raclette is a dish where Swiss Raclette cheese is melted and poured over vegetables such as potatoes. It has a strong aroma, but surprisingly refreshing when eaten, making it a perfect dish to pair with wine. While the common image is of melting and scraping the cross-section of a whole cheese, at our restaurant, you can enjoy it in a style similar to how it is eaten in Swiss households.
