A soup made by simmering a base of pork bones and chicken bones with six types of vegetables over low heat for more than half a day, bringing out the umami of the ingredients, then raising the heat to finish with an exquisite white soup. Aiming for a ramen that is easy for everyone to eat, we recreated the miso from Hakodate, Hokkaido, based on Shinshu's white miso.
