This is a dessert galette. We offer 5 types: Salted Butter Caramel, Homemade Honey Ginger, Sugar Citron, Baked Marshmallow & Chocolate, and Berry Berry Sour.
Higo horse meat is marinated with several spices for 2 weeks, simmered slowly for 6 hours, hand-pulled to remove any sinew, mixed with locally sourced pork and raw horse meat, and stuffed into casings. This is a meticulously crafted delicacy. The aroma of the spices when grilled stimulates the appetite, and the texture is unlike anything you have ever tasted. Enjoy it with onion salt jam.
