At NEO Shinjuku, we challenge ourselves to reconstruct that 'richness' and 'sense of guilt' while being 100% plant-based. We aim to surprise those who have never experienced plant-based meals, defying their preconceived notions of 'it must be bland' or 'it's just beans,' and we take joy in hearing, 'Wait, this doesn't use meat?' or 'This is already like meat.' Vegan Dan Dan Noodles - 1,600 yen. Dan Dan Noodles are a popular spicy and deeply flavorful noodle dish in Japan. It features a rich and creamy spicy soup made from homemade chili oil, carefully selected domestic vegetables, and healthy soy milk. Additionally, the innovative alternative meat 'Mycoprotein' derived from fermentation brings out the perfect umami flavor. This exceptional bowl is made with care to ensure it contains no animal products, is gluten-free, and has a flavorful soup base that is also free from the five aromatic vegetables. Regardless of dietary preferences or restrictions, this dish is truly inclusive and satisfying for all customers. *The base soup and alternative meat do not contain garlic.

It blends shiitake mushrooms and kombu in a dashi broth, infused with hojicha, and combines gluten-free tamari soy sauce to recreate the 'rich' plant-based essence of Japanese ramen.
