This is a pure Hakata ramen made with a broth simmered for 16 hours using pork head, knuckle, spine, and back fat from 'domestic Japanese pork'. It uses a blend of several aromatic vegetables such as kelp and garlic, along with a mix of rich and light soy sauce from the long-established Hakata shop, Joko Shoyu. The noodles are homemade, using the thin 28th number noodles. They are characterized by their lightness and crispy texture, so please enjoy them either 'barikata' (very firm) or 'kata' (firm).
Contains a specially made soft-boiled egg from Jun Ton.
The soup uses a pure tonkotsu broth, and the sauce is made from scallop adductor muscle, shrimp, shiitake mushrooms, and kelp that have been steeped in water for two days, seasoned with sea salt and a light soy sauce from the long-established Hakata brewery, Joko Soy Sauce. The aromatic oil also uses scallop adductor muscle, concentrating the umami of the scallops. The noodles are homemade, using 28th number thin noodles. They are characterized by their lightness and crispy texture, so please choose either hard noodles or regular noodles.

Please pour the soup you finished eating, along with corn and olives, over the small rice topped with cheese and chopped green onions. Using a ladle with holes makes it easier to scoop up the corn and olives.
