In China, alcohol brewed from grains, especially rice, has been produced for more than 5,000 years and is known as one of the world's three oldest liquors (beer/wine/shaoxing wine). These brewed liquors, produced in various parts of China and Taiwan, are collectively called huangjiu. Among these liquors, those made in Shaoxing, Zhejiang Province, with glutinous rice, malted barley, and other yeast, and with water from the Jianhu Lake in Shaoxing, are called "Shaoxing liquor". Today, like champagne, it is strictly controlled by the government (GI protection system), and of the approximately 80 breweries in Shaoxing, only 14 are authorized by the government to use the name "Shaoxing wine. We offer only carefully selected authentic Shaoxing wine, mainly from one of these companies, Bai Tao Brewery.
The longer the aging years, the more the acidity decreases due to aging, resulting in a mellow taste and rich aroma. However, it cannot be said that longer aging years always mean better taste. For dishes with strong fat and spiciness, younger Shaoxing wine aged 3 to 5 years is suitable. For dishes with relatively light seasoning, the rich flavor of long-aged Shaoxing wine enhances the dish. Enjoy various Shaoxing wines according to your preferences and the dishes you pair them with.
The display of the aging years of Shaoxing wine requires that the wine contains more than 50% of the sake that has been aged for that number of years. In the case of 10 years of aging, it is based on 10-year-aged Shaoxing wine, blended with younger Shaoxing wine aged for less than 10 years to adjust the flavor. For original sake, only the Shaoxing wine aged for that number of years is blended. When referring to 10-year original sake, it means that only Shaoxing wine aged for 10 years is used. Shaoxing wine is made from glutinous rice, barley koji, and water, but the only permitted additive is caramel. Caramel is added for coloring, but the amount added is said to be so small that it does not affect the taste. However, recently, Shaoxing wine that does not contain caramel (referred to as caramel-free or non-caramel) has also been made available. When tasted side by side, it is indeed less sweet and has a refreshing flavor.

It is dry and has a refreshing taste. It is rarely imported to Japan. - Jiafan Wine: This is made by increasing the amount of glutinous rice and barley koji by about 10% compared to Yuan Hong Wine. By taking more time for both primary and secondary fermentation than Yuan Hong Wine, it results in a mellow and rich flavor. Most of the Shaoxing wine available in Japan is Jiafan Wine. - Zhanjiang Wine: This is brewed using Yuan Hong Wine instead of water in the brewing process. It has increased sugar content and a rich flavor. We use it in our Dragon Highball. - Xiangxue Wine: This is brewed using shochu made from the pressed lees of Shaoxing wine instead of water, which is then distilled and aged. It has a strong sweetness and a rich aroma. We use it in our desserts.

This is a special Shaoxing wine that is rarely imported into Japan, 'Ryomi Fushike', the pinnacle of Bai Tower brewing. The original sake, aged for thirty years, has been further deep-chilled to remove impurities to the utmost limit. It is characterized by a long-lasting flavor, with a smooth and refreshing aftertaste that stands out at the end. Ryomi Fushike represents the appearance of the Big Dipper rising in the eastern sky. It signifies the arrival of the spring equinox and the beginning of the rice planting season, which is essential for Shaoxing wine. The bottle is engraved with the symbol of Shaoxing, Mount Kuaiji, and the constellation of the dragon ascending.
