When you think of Matsusaka, you think of Matsusaka beef. Of course, that's true, but actually, there is also 'pork.' This is Matsusaka Pork, which has been certified by the Matsusaka Livestock Public Corporation. It has a fine marbling in the red meat, and the low-melting-point fat melts in your mouth, making it worthy of the title 'the Matsusaka beef of pork.' We offer dishes such as round, disc-shaped steaks made from the loin, grilled to perfection, and salt-baked shoulder loin wrapped in herbs and salt. Pork is something that eats muscle, but it is surprising that by handling it in a way that does not put a strain on the muscle, it can become even softer and more delicate. Additionally, after processing, it is stored in the refrigerator with the bones for several days. By promoting the aging of the protein, the amino acid content in the pork is increased, enhancing its umami and sweetness through further aging.
