Because Kushi-ya Yokochou raises pigs and processes them in its own factory, we can offer unparalleled freshness. Kushi-ya Yokochou's liver has absolute confidence in its freshness and taste. We grill the freshest liver at once over charcoal that reaches about 900 degrees.
For the first beer, nothing beats sour motsu! We have polished the freshest motsu without compromise. The seasoning is simply ponzu and yuzu pepper! The key to its deliciousness is sourcing exceptionally fresh senmai. There is nothing else. The safety point is to 'heat sterilize at a core temperature of 75 degrees Celsius for at least 1 minute.' Heating sterilization does cause some loss of the unique crunchiness of senmai. Therefore, we need the freshly slaughtered, crunchy senmai from the same day.

We also offer a smaller portion, 'Motsusuki Small' for 1500 yen.
In typical motsunabe specialty restaurants, the 'pre-addition method' is common, where raw offal is added to cold broth and cooked. However, this causes the unique flavor of the offal to transfer to the broth. Our motsunabe adheres to the basics of cooking by using the 'post-addition method,' where offal is added only after the broth has boiled. The resulting broth is clear and free of off-flavors, allowing you to enjoy the rich flavor of the offal in its best form. We also offer a smaller portion of 'motsunabe' for one person at 1500 yen.
