Made with 100% buckwheat from Eiheiji. We have added coarsely ground buckwheat to create a well-balanced flavor and sweetness in the soba. Please enjoy it with a carefully crafted dipping sauce made from aged bonito and mackerel, and a salt that enhances the aroma of the soba.
A blend of 100% buckwheat soba from Eiheiji with spicy daikon and daikon from Fukui Prefecture. It has a moderate spiciness, making it a characteristic oroshi soba from Fukui.
Blended with soba flour from Eiheiji for warm soba. Finished with the sweetness unique to 100% soba, please enjoy the broth made with four types of dried bonito, mackerel, and natural kombu for a rich flavor.
A luxurious dipping soba made with Tsuki no Wa Kuma from Ikeda Town, Fukui Prefecture, and crunchy Ne Mitsuba that evokes the scent of the mountains. It pairs well with the coarse and rich soba.
Domestic duck is grilled to tenderness, with tsukune mixed with duck and grilled green onions as an accent. The broth for the Nanban is a special blend of dried tomatoes and dried shiitake mushrooms from Fukui, crafted with care by the chef. This is a bowl filled with dedication that you must try at least once.
Enjoy the wild vegetables such as bamboo shoots, kogomi, and tara no me quickly cooked and served with cold soba, along with the crispy texture of deep-fried thin tofu and the refreshing grated spring radish.

Hokuriku winter delicacy. It is tempura made from the white roe of true cod. It has been made into tempura with seasonal vegetables.

This is grilled mackerel sushi made with fatty mackerel combined with plenty of condiments such as mountain burdock and perilla, served on sushi rice. (Serves two pieces per person)
On top of mascarpone mixed with soba tea from Fukui Prefecture and pure sake lees, we lavishly squeezed rich cream made from domestic Japanese chestnuts and premium sake. *The alcohol has been cooked off, so feel free to enjoy if you're driving.
When it comes to winter in Fukui, it's Mizuyokan. We have finished it off with a sophisticated Mizuyokan by adding several types of sake. *The alcohol has been evaporated, so those driving can enjoy it too.
