This shabu-shabu uses the relatively light shoulder loin of beef carefully raised in the Tanba region of central Kyoto, enjoyed with the classic Kyobancha from Kikkoya.
The specially selected hand-roasted Kyoto bancha removes excess oil, enhancing the aroma and umami, which further brings out the deliciousness of domestically produced mochi pork and vegetables. Please give it a try.
