The taste is slightly rich, sweet, and smooth. It has a strong sweetness, giving the first impression of a sweet sake, but the aftertaste is clean, and the sweetness does not linger.
The aroma rising from the glass is like elegant sweet fruits. The lingering scent that spreads when taken into the mouth is light like cotton candy, transforming into aromas of banana and pear. A subtle sweetness is felt on the tongue, and the finish lingers long.
A splendid aroma, rich flavor, dense lingering scent, and a moderate acidity that tightens the overall experience come together in perfect harmony, showcasing a good balance. After sliding down the throat, it leaves a refreshing finish.
The aroma rising from the glass is rich, with a sweet scent reminiscent of flowers rather than fruit. The mouthfeel is very gentle, gliding effortlessly over the tongue and flowing smoothly down the throat. It leaves a light, lingering fragrance in the end. The use of a centrifuge has resulted in a sake with a distinct 'texture of aroma.'
The alcohol content is high at 35 degrees, but it is finished as a shochu with a gorgeous ginjo aroma. Drinking it on the rocks creates a fragrance and richness similar to that of brandy.
The fruity and elegant flavor of 'Dassai 50', polished to 50% using the finest sake rice 'Yamada Nishiki', along with the sweetness of rice that can only be appreciated in nigori sake. The refreshing effervescence created by secondary fermentation in the bottle. An increased sharpness and fresh crispness. Finally, please enjoy the vibrant taste and finish presented by the delicate yet robust Junmai Daiginjo.
With a smooth mouthfeel, the gentle umami of rice gradually spreads. It has a deliciousness with a floral and sweet impression.
The aroma spreads gently, with a slight sweetness on the palate, transitioning to a subtle acidity while gradually revealing a richness reminiscent of the umami of rice. It can be enjoyed at temperatures ranging from chilled to warm.
Like the special junmai sake, this is a mainstay of Nanbu Bijin. It has a pleasant ginjo aroma, with a subtle spread of the sweetness and umami of the rice, yet it also has a crisp finish, making it a gentle, clean, and elegant junmai ginjo. It pairs exceptionally well with refined Japanese cuisine.
A fruity ginjo aroma spreads in the mouth with a smooth sweetness, and the refreshing aftertaste with low acidity is a delicious characteristic of Kudoki Jozo.
This fruity sake, which allows you to enjoy the qualities of ginjo sake, has a smooth and pleasant flavor that is very easy to drink, making it appealing not only to sake lovers but to everyone.
The palate is characterized by fruity aromas, and the flavor spreads harmoniously in the mouth with the umami of rice, finishing cleanly and refreshingly as a pure rice sake. It is recommended to be served chilled and pairs well with any dish as a food-friendly sake.
The only super dry type of Phoenix Beauty. After bottling the new sake immediately, it undergoes pasteurization in the bottle. It is aged at low temperatures for about one year, fully extracting the umami of the rice. The sake meter value is raised to +12 or higher, resulting in an excellent crisp finish. This is a dry junmai sake that I highly recommend for those looking for a delicious dry sake, featuring a perfect balance of 'pleasant aroma,' 'umami of the rice,' and 'crispness.'
A soft mouthfeel and a refreshing taste. This is a representative sake of Hakkaisan, enjoyable both chilled and warmed. The subtle aroma of koji when warmed is also one of the pleasures of this sake.
If you want to experience the Niigata style of 'refreshingly dry', this is the sake for you. This honjozo, carefully brewed in a low-temperature environment during winter, features a crisp finish and a taste that doesn't become tiresome. It can be enjoyed warm, at room temperature, or chilled.
The initial aroma is subtle. It has a mild mouthfeel with a gentle umami and a crisp finish that flows smoothly. You can faintly sense a calm ginjo aroma. The acidity and umami spread moderately and then recede, making it a 'relaxing' style of sake that naturally encourages you to have one or two more glasses while enjoying your meal.
