Fish, Meat, and Vegetables This course is the most popular and well-balanced course at Koreabu. Each dish, carefully prepared by the hands of Japanese cuisine artisans, reminds us of the four seasons, which we tend to forget. Accented with the "Beef fillet charcoal-grilled steak sarada" on the vegetable plate, this menu is substantial in both content and number of items.
The main dishes are fresh seasonal fish (sashimi) with vivid colors and charcoal-grilled A5-ranked Sendai beef steak. The Sendai beef, quickly prepared over our charcoal fire, has an exceptional, elegant sweetness that melts on the tongue. It is ideal for entertaining important guests.
This is a reasonably priced course that makes the best use of seasonal ingredients with rich seasonal color. Also available for business meetings and entertainment.
The fish is salted and left for a day to remove any fishy odor, then marinated in a homemade blend of Saikyo miso for 4 to 5 days. The silver cod, carefully grilled over charcoal while allowing excess fat to drip off, is a proud dish that showcases our dedication and effort.
The kinki, carefully grilled over charcoal, has a crispy surface and a fluffy texture, with just the right amount of fat. The bones left after eating can be made into a salt-based soup upon request. *Please check in advance as there may be times when it is not in stock.
