A special unadon made with a whole live eel. This eel is larger and thicker than regular eels. We use the brand 'Kiso River Eel' from the Kuwana Eel Association, raised in the rich underground water of the Kiso River. The Kansai-style preparation involves grilling without steaming, allowing you to enjoy the crispy texture and the exquisite flavor of the eel.
Enjoy a premium hitsumabushi that can be savored three or four times in one go. Fresh eel generously laid over rice. For the first serving, enjoy it as is. For the second serving, add some condiments. For the third serving, pour dashi over it for a lighter taste. Additionally, try it with grated yam for a different flavor! Savor the exquisite hitsumabushi carefully grilled with Tosa Binchotan charcoal.
