The 'phantom native chicken' known as 'Jitokko' is produced only by a limited number of farms in Miyazaki. This breed, which has been raised in the old Shimazu territory of Miyazaki and Kagoshima, is a native species that originally existed in Japan. It is said that farmers began to call it 'Jitokko' as they offered it to the local lord due to its deliciousness. Breeding is difficult, and it was designated as a fixed natural monument in 1943. The 'Miyazaki Jitokko' is created by crossing this 'Jitokko' with a large 'Inferior White Plymouth Rock' as the father and a high egg-laying female from 'Kyushu Road' using a three-way crossbreeding method. Currently, there are only 35 farms producing 'Miyazaki Jitokko' in Miyazaki Prefecture (as of July 2007). The annual shipment volume is only 300,000 birds (as of 2006), which is a very small amount for a native chicken. This is because Miyazaki Prefecture only ships chicks to the 35 designated farms that meet strict production conditions. This rigorous quality control makes 'Miyazaki Jitokko' a phantom chicken in terms of both quantity and quality (taste). The characteristics of 'Miyazaki Jitokko' include a firm yet tender, juicy meat texture with a deep flavor that emerges the more you chew. In particular, the charcoal-grilled Jitokko is a superb dish filled with the fragrant aroma of chicken fat. Additionally, the breast meat and tenderloin are not dry, and they are rich in chicken flavor. Furthermore, it can be said that it is low in fat, low in calories, and easy to digest. Compared to the famous Hinai chicken, which has a light and elegant taste, 'Miyazaki Jitokko' stands out with its rich flavor and juicy fat. While the light ginjo-type sake pairs well with the Hinai chicken, 'Miyazaki Jitokko' is perfect for full-bodied junmai sake or sweet potato shochu... I believe those who enjoy alcohol will understand this well.
