This sake is made from Niigata Prefecture's 'Yukino Se' rice, polished to a rice milling ratio of 28%. The polished rice resembles a shining moon like a pearl. The term 'Tokugetsu' includes the meaning of seeing the moon reflected on the water's surface, and it was chosen with the hope that it could be enjoyed widely during 'Otsukimi' (moon viewing). Historically, the eighth month of the lunar calendar has been considered a time when the air is dry, allowing the moon to appear vividly, and with low humidity, it is a comfortable time for moon viewing. Since ancient times, during this period, altars were made, adorned with pampas grass, and offerings such as dumplings, taro, and sake were presented while gazing at the moon. Furthermore, when the moon-viewing festival was introduced from China during the Heian period, the nobility held moon-viewing parties and boat rides, composing moon poems and drinking moon-viewing sake. The deep feelings that the Japanese have for the autumn moon can be inferred from the many songs that have been left behind.
