Our hand-made soba, made with Hokkaido-produced buckwheat flour, is served in a ratio of 10 parts buckwheat flour to 1 part binding agent, known as 'soto-ichi soba.' The flavor of the soba is very strong, and by making it by hand in our shop, you can directly enjoy the aroma of the soba itself, which is its charm! The texture is smooth and slippery, and instead of wasabi, if you enjoy it with our homemade yuzu pepper, a refreshing fragrance will spread immediately. The deliciousness is addictive, with a spicy kick that complements the toasty flavor of the soba. This is a limited quantity item, so please place your order early.
