Red sea bream, one of the representative fish of Shizuoka Prefecture. We have combined the fatty red sea bream from Shimoda Port, which boasts the highest landing volume in Japan, with fresh seaweed from Lake Hamana.

Hida Koshihikari rice, grown in the Hida region surrounded by the Northern Alps and Hakusan mountain range, has been attracting attention and receiving high praise in recent years. Although much of it is consumed locally, it tends to be overshadowed by other rice-producing areas. However, its plump sweetness and aroma will surely bring a smile to your face. We use freshly polished Hida Koshihikari rice, sourced directly from the producer, and cook it in a hagama pot with soft water to bring out the natural flavors, one cup at a time upon ordering.

Makiri is a sharp knife used by fishermen in Sakata City, Yamagata Prefecture, and is considered a charm against evil spirits. This sake is a dry and refreshing junmai sake with a deep flavor, made using a unique fermentation technique that pairs well with Japanese cuisine. Glass: 600 yen per serving, 1,000 yen per 1.8L bottle.
A well-balanced junmai sake with a strong dryness that brings out a fullness of flavor. It has a soft mouthfeel without emphasizing the spiciness, and leaves a refreshing aftertaste. When warmed, it further enhances the three-dimensional flavor. Glass 800 yen per serving, 1,300 yen per 180ml.
While it is made with Kimoto method, it has a good balance of softness in the initial taste and sharpness in the aftertaste, spreading a rich umami and pleasant acidity from the moment it touches the mouth.
