Yonezawa is the owner-chef of the restaurant, which is open only 10 days a month and is a top-secret place known only to those in the know. [Tokyo Nishiazabu] Chef Yonezawa, who experienced being the first Japanese sous-chef at the Jean-Georges flagship, has been very active, including producing The Burn in Minami Aoyama while having extensive experience at famous restaurants. I enjoyed innovative creative cuisine at this precious seat, which is only open about 10 days a month. The ayu capellini and aged meat make-in were particularly impressive. I switched to pairing halfway through, and everything was delicious.
