The night before the Amakusa Triathlon event, I visited with a couple of friends. I had previously visited for lunch, but it seems the restaurant has been renovated since then, and now it felt like a completely different place with only a counter (in a good way). The name on the shop's curtain had also disappeared (laughs) (for first-time visitors, be careful). The chef, whom I hadn't seen in a while, was as lively as ever, serving delicious food and drinks with perfect timing while cracking fun jokes from the start. Next to us were two beautiful women from Tokyo, and next to them was a friendly couple from Osaka. I was impressed to see so many customers coming from far away as usual. For some reason, we were the only ones from Kagoshima who weren't allowed to drink Kumamoto sake! The chef recommended sake from the north, which was probably his way of being considerate. In the end, we weren't allowed to drink local sake (laughs) (the sake from Tohoku was also delicious). The food felt even more delicious and gentle than when I visited for lunch before. They serve quite a generous amount, so I recommend going with an empty stomach. I had a wonderful time. I was also happy to meet the mom at the end. Next time I go to the sushi restaurant in Kumamoto City run by their son, I would like to show them some pictures.

暖簾の店名が消えています。突然訪問して無理やりお店に入る人を減らす目的だそうです。そんな不躾な客がいるのですね💦おかげで楽しいお客様ばかりでした😁

相変わらず愉快な大将でした♡

改装後はカウンター越しに港の景色が見れるようになっていました。ラッキーな事に、満月を見ながら、「お月見お寿司」でした。

The chef was very talkative and engaged in various conversations with us. One person wanted to have no wasabi, but since they could only offer wasabi, they said something like, 'I'll give you plenty of wasabi!' and we enjoyed our meal while chatting. Additionally, a couple who had made a reservation arrived more than 30 minutes late, but without showing any displeasure, they promptly handled other dishes for us with a 30-minute delay. The Ama-kusa shrimp was exquisite. Instead of just dipping it in soy sauce, they offered it with salt or some other special preparation. I believe it is definitely worth the trip to Ama-kusa for this sushi.

The personality of the owner and the skill of the artisan... I would say that the taste of the neta is determined by the thoughts of the person making the sushi. The balance with the rice, the fun talk😊. I went with my wife and there are many sushi restaurants that are just overpriced. I don't support them because they are local. Edomae sushi made by a 73 year old artisan 😊. I hope you enjoy it 🙏🙏🙏🙏🙏.

Both the nibbles and the nigiri were delicious, and the level of the fish was as expected. The kohada and mackerel were a must, but the sea bream was a surprise this time, with its refined fatty flavor. The sea bream that came out as nigiri was even more of a shock, and I was surprised at how delicious the sea bream was. The red sea bream also had a good balance of fat and was just right when served as nigiri, and the flavor was extremely rich and satisfying. The tuna from Goto, Nagasaki is not bad either. I went for dinner. It's a course-only menu with about 8 counter seats for approximately 2 hours. Despite the high price, they only accept cash payments. The details of the drink prices are also unclear, so I recommend bringing extra cash. I read online that it is a setup where you have to take off your shoes, so it's better to avoid shoes that are troublesome to take off and put on, but at least in the evening, I sat at the counter with my shoes on.

All the sushi was delicious. I was surprised to learn that they change the wasabi and yuzu kosho depending on the conditions of the fish of the day. However, it was different from sushi eaten only with soy sauce, so I enjoyed it to the end. I also enjoyed the conversation with the owner.
