Japanese restaurant without a sign, adult space in an auto-locking apartment. Please come to our restaurant for New Year's parties, cherry blossom viewing, anniversary celebrations, launches, and year-end parties.
We use natural seasonings made without food additives or chemical seasonings. During transportation, we use natural seafood that has not been soaked in chemicals. Most of the vegetables we source are naturally cultivated and organic vegetables. *Naturally cultivated vegetables are those that have not used pesticides or chemical fertilizers and are only 0.1% available in the market. *Organic vegetables are those that meet the Organic JAS law. (While we strive to source naturally cultivated and organic vegetables, not all of our vegetables are naturally cultivated or organic.) *Food additives, in a broad sense, refer to 'substances added during food manufacturing' or 'resins used in food packaging,' but the food additives we do not use include 'designated additives defined by the Ministry of Health, Labour and Welfare - chemical synthetic substances.' Therefore, we use the following items that are not included in designated additives during the cooking process: ● 'Bittern' extracted from seawater when making tofu, and 'straw ash' obtained from burning straw when making konjac, which have been traditionally used in Japanese cuisine for a long time. ● Natural products such as fruit juice, agar, wheat flour, and egg whites, made through non-chemical processing from natural plants and animals.
Seven parts polished. Easier to eat than brown rice, but retains the nutrients of the bran.
Natural sun-dried natural salt with sweetness and umami. Non-direct fire low-temperature manufacturing method that does not disrupt the balance of seawater components.
Made with domestically produced non-GMO soybeans. A rare product brewed using ancient methods, the only one in Japan. A rich and fragrant dark soy sauce that has been aged for a long time.
Wheat and soybean blended miso
Domestic pesticide-free glutinous rice used, aged for 2 years to create authentic mirin
No added alcohol, made with 100 percent domestic rice
Domestic rice brewed. A traditional rice vinegar established in the Edo period.
Bonito flakes made from carefully aged skipjack tuna. Origin: Makurazaki. The highest class of katsuobushi with a special aroma.
Long-aged Rishiri kombu. Deep richness and aroma of five-year-aged kombu.
Whole Ingredient - (Ingredients are balanced when taken as a whole, so we consume the blessings of nature without leaving anything behind) Body and Soil are One - (The idea that by consuming seasonal ingredients from the land where we live, we can maintain balance in our bodies) Since nutrients are packed in the skin, we prepare vegetables whole, including the skin, stems, and roots, as much as possible (Whole Ingredient) Our motto is to cook using seasonal domestic ingredients (Body and Soil are One) (* The asparagus and avocado in autumn and winter, and the Fukuwari pizza use ingredients that are not domestic)
Although not listed on the menu, most of the vegetables are pesticide-free, naturally grown, and organic. Therefore, there may be some vegetables with poor color, but this is a sign of natural ripening. Prices may vary depending on procurement costs. Seasonal items may not be available at certain times. Depending on the season and procurement, the images and quantities may differ.

Therefore, the following items, which are not included in designated additives, are used in the cooking process: ● 'Bittern' extracted from seawater when making tofu, and 'straw ash' used when making konjac, which have been traditionally used in Japanese culinary culture for a long time. ● Natural products made from plants and animals, such as fruit juice, agar, wheat flour, and egg whites, through non-chemical processing.
