We use natural seasonings made without food additives or chemical seasonings. During transportation, we use natural seafood that has not been soaked in chemicals. Most of the vegetables we receive are naturally grown and organic vegetables. Note: Naturally grown vegetables are those that have not used pesticides or chemical fertilizers and are strong vegetables that account for only 0.1% of the market. Note: Organic vegetables are those that meet the Organic JAS law. (We strive to source naturally grown and organic vegetables, but not all of our vegetables are naturally grown or organic.) Note: Food additives, in a broad sense, refer to 'substances added during food production' or 'resins used in food packaging,' but the food additives we do not use include 'designated additives - chemical synthetic substances' as defined by the Ministry of Health, Labour and Welfare. Therefore, the following items, which are not included in designated additives, are used in the cooking process: ● Traditional items that have been used for a long time in Japanese cuisine, such as 'nigari' extracted from seawater when making tofu, and 'wara ash' obtained from burning straw when making konnyaku. ● Natural items made from plants and animals, such as fruit juice, agar, wheat flour, and egg whites, which are produced through non-chemical processing.

Since opening, it has been the unwavering number one popular dish. Created by the owner, Fukusaka, this asparagus dish has been offered since 1987. Served with a sauce made from natural moromi and additive-free soy milk mayonnaise. Spring and summer - domestically produced, autumn and winter - produced in the Southern Hemisphere (the asparagus from Yamagata in spring and summer is pesticide-free, while other asparagus is not pesticide-free). The natural nameko known as the 'Gassan' which is said to be a phantom. A mushroom picking expert has directly delivered the freshly picked ones from the mountain to our store. This rare item features the unique sliminess of nameko and an outstanding crispness of freshness coexisting. The natural maitake, known as the 'phantom maitake,' from the Asahi Mountain Range. A rare find, it takes a mushroom expert hundreds of trees to find just one. Every year in early summer, sweet and tender freshly harvested Gassan bamboo shoots from the masters of bamboo shoot gathering in Gassan arrive from Yamagata! The bamboo shoots that grew in Gassan, where snow is still present, are delivered to our store the next day. They arrive still wrapped in snow, so there is no time for the temperature to rise and bitterness to develop before we serve them!
