Driven by a desire to add new appeal to Yufuin's food culture, owner Mr. Kai focused on irori-style grilling, a traditional Japanese method. Centering on local Oita ingredients and culture, his unique sensibility — staging the dining experience itself, for example by offering rare cuts in a storytelling sequence from sunazuri (gizzard) to segimo — has created many repeat customers.
