First of all, you will be asked if you would like to start with snacks or nigiri. The snacks are Ponzu (vinegared sea bream) Butter Grilled Manju Clam Kabako crab squid, nodoguro, gas prawn Buffoon sea urchin red kidney bean paste Shime saba (mackerel) At the "Buffoon sea urchin" section, you will be asked if you would like to continue with the dish. You will be asked if you would like to continue with nigiri. When the "Shime saba" is served, you will be asked if you would like to have nigiri. I understood that this was the right time, and moved on to nigiri. Since the snacks are considered to be the best part of the Hokuriku-style meal (Manjusai, Kabako crab, nodoguro, and gas shrimp), I think I could have changed to nigiri with the buffoon sea urchin. The nigiri are, blue-ringed squid Sea bream konbujime Amaebi (sweet shrimp) Pickles (sweet pickles) Seared Toro (fatty tuna) Bai clam horse mackerel Miso soup of sea bream hand-rolled sushi with negitoro unagi kyu (eel cucumber) Additional, salmon roe sea eel was. The last one, negitoro and unakyu, was so delicious that I wondered if the salmon roe and conger eel could be included in the omakase. I will put my personal evaluation to the side because it is a sweet boiled-down soy sauce that I am not used to eating.

Delicious 🥺🥺🥺💓 Personally, I prefer the rice to be a little softer, The fish is delicious and agonizingly delicious 🥺💕. The rice is from the same farmer and the size of the grains changes every time. The core of the rice is still pretty firm 🍚. I never thought nodoguro was this tasty before, The refined oil is soaked in 💓💓💓 I even asked for nigiri (rice balls) 😛😛 lol I hope to go there again sometime 🥳.

The food was top quality (beautifully fresh fish and seafood - we started with sashimi and moved on to sushi) and the presentation lovely. The lady who waited on us was so gracious and kind: her English is much better than she thinks! Very few spaces at the counter so we were pleased to have got seats, having booked for supper that day. Watching the chef’s deftness, precision and modesty was a joy and the whole evening a delight. Highly recommended.

A so-called hidden gem. If you want to taste the best seafood in Hokuriku, this is the best place to go. Sushi restaurants near the sea are always delicious, no matter what you eat. If it is a highly rated restaurant among them, you are sure to have a blissful time. By the way, I like gas shrimp the best.

Only omakase course 🌟. Toast with non-alcoholic beer🍻! Start with snacks🏁🏁. After that 🍣. As expected of a Michelin star 🌟! It was delicious ♥️ I love Sushi Shinosuke 🍣🌟!
