Noto-mae Sushi, a condensed essence of Hokuriku's charm
Sushi Kibatani is a small sushi restaurant located near the historic tea house district of Kanazawa’s Hikosamachi. Since its opening in 2016, we have been serving sushi made with local fish from Toyama, Himi, and Shinminato, as well as fresh ingredients from Ishikawa. We cherish the natural flavors of the fish, preparing each piece with genuine care and showcasing the seasonal attractions of the region. "We want you to taste the goodness of Hokuriku fish, which offer a wide variety and strong seasonal appeal," and most of the fish served, except tuna, are locally sourced. Those Hokuriku fish are transformed into superb ingredients through the owner's precise cuts—he knows exactly how to keep them alive—and by adding delicate extra touches such as aging and searing.

We were excited to enjoy this highly rated omakase dinner while visiting Kanazawa. While the selection of fish was good, we were let down by the service and declining attention to detail by the chef, especially towards the second half of the meal. The chef began to make more and more sloppy mistakes as the night wore on (misplaced rice pieces, left on skin, loosely formed nigiri, pieces of bone left in, loose fish scales left in). It was clear he had no interest in serving us as he’d hastily put the course down, mutter the selection, and walk away to engage with other guests. It was a disappointing meal because of the service. Our experience is that this place is not welcome to visiting tourists. Spend your money somewhere else.
The food were amazing. Some of the best sushi I ever have. Sushi master Mitsuhiro Kibatani explained every dish he made and the best way to eat them. The staffs were very friendly. Highly recommended and I would go back again.
I was generously served seasonal ingredients in a luxurious manner. Everything was wonderful, and the presentation was to my liking. I definitely want to visit again next time.

We had a wonderful experience at Sushi Kibatani. We had a 20-course meal, and every single piece was amazing, without exaggeration. The staff was friendly, and the chef was kind, welcoming, and made us feel very comfortable. Since this was our first omakase experience, we truly appreciated the care and atmosphere throughout the meal. It was a memorable evening, and we would happily recommend Sushi Kibatani.
have visited it in 2024 with my family. Excellent experience! Nice and kind chef, had some chat with him in my broken Japanese. he allowed me to take some pictures. The food was very good! Pricy but worth it! Definitely recommend it
