Starting with a special salad using Toro Yuba, the "Furusato Dashi Rolled Egg with Homemade Broth" is an original dish made with luxurious "Furusato Kyoto Egg" from Kyoto, mixed with ichiban dashi and rolled up. The ichiban dashi is made from dried bonito flakes from Makurazaki and Rishiri kelp from Hokkaido, and we are proud to say that the broth trapped inside oozes out over time.
