At Hokurian, you can enjoy creative dishes made with fresh lake fish from Lake Biwa. Starting with funazushi, which is aged over two winters, a variety of seafood such as carp, gudgeon, and lotus root are offered throughout the seasons. In particular, the carp sashimi spreads a fresh umami flavor in your mouth, characterized by its refreshing taste. Furthermore, innovative dishes that make use of the charm of fermented foods delight the five senses. Thanks to Chef Fujisha's ingenuity, the dishes are crafted to eliminate any fishy taste.

The interior features large windows that offer a panoramic view of Lake Biwa, and the Japanese modern design soothes the mind. It was designed by the owner's brother, who is an architect, and won the Good Design Award upon its reopening in 2021. The dining area on the first floor and the guest rooms on the second floor are also sophisticated, allowing for a special time to be spent.

Hakurian is a traditional restaurant run by the family of 'Uoji', a long-established business with over 230 years of history by Lake Biwa. After suffering damage from a typhoon in 2018, it was reborn in 2021. The new start in this place was led by the seventh generation, Kenkyu Hazaki. He aims to provide modern and unique dishes while preserving tradition, utilizing his years of training experience.

Chef Kensuke Hazaki has been helping with the family business since he was young, inheriting the traditional cuisine of Lake Biwa. After training at 'Kyoto Kitcho Arashiyama Main Store', he honed his skills at 'Korian' with his father starting in 2003. He captivates many food enthusiasts with his creatively rich dishes and is gaining attention as the new leader of Korian.
