This is a sushi restaurant operating in the heart of Osaka, loved by the local people. It is supported by many for its sense of luxury and good cost performance. The sushi rice, which uses red vinegar and white vinegar interchangeably, is a feature, offering a taste that blends tradition and innovation.

Head Chef Mr. Kozuki embodies an original concept of "aka = red vinegar, shiro = white sushi rice" in the sushi he shapes. He switches between red-vinegar and rice-vinegar sushi rice for each topping, and the practice of serving everything already seasoned reflects a philosophy intended to convey the ingredients' individuality and the meticulousness of the work without reservation. The completeness of a piece in which the lean part of medium-fatty tuna (chutoro) is accompanied by red-rice sushi rice underpins the restaurant's Michelin Bib Gourmand recognition.
