Yakitori's offal items are particularly highly regarded. Chigimo is served in large pieces with a slightly rare cook, offering a melt-in-your-mouth texture together with a rich sauce. Hatsu comes with the hatsumoto attached, giving it a substantial bite and strong savory flavor. Sasami and chicken skin are also properly cleaned and grilled to the right degree, allowing the quality of the ingredients to come through plainly. The final ramen is also a very satisfying bowl.

The interior has a calm atmosphere and feels like a hideaway. The layout centers on the counter, bringing you close to the grill chef so you can quietly enjoy watching the yakitori being prepared. On some days the owner runs the place alone, creating a coexistence of tension and warmth throughout the shop. It is a comfortable space where even first-time visitors naturally feel at ease.

For more than 35 years he has been self-taught in yakitori, mastering heat application and timing. He works with binchotan charcoal and an uchiwa fan, with no compromise in his approach of finely adjusting the grilling and flavor for each cut. Having no master and describing his path as a "lifetime of training," he rigorously oversees everything from ingredient preparation to the timing of service, believing in delivering the most delicious moment.
