The emphasis is on cooking and eating life in its natural habitat of mountains and oceans. The restaurant has a modern atmosphere, decorated with the bones of the wild boar that the owner himself caught. The restaurant is located in the middle of a private house with many rice paddies, offering a peaceful view. The sign "Uozen" and the fact that you have to take off your shoes like in a kappo-ryouriya (Japanese cooking restaurant) give this popular restaurant an unusual appearance for a French restaurant.

Budget per person: JPY 15,000

Niigata's No. 1 French restaurant, UOZEN. The chef is so particular about his ingredients that he himself spends time in the fields, hunting, fishing, and gathering wild vegetables. He uses the best ingredients from Niigata to create dishes with depth using his own culinary methods. Each dish is truly complex and has the best flavor, and every time you put it in your mouth or move your mouth afterwards, various expressions will appear in your mouth and then change again. I recommend the course, but if you don't mind, the gibier course is hard to find anywhere else.

The chef personally engages in hunting and maintains a home garden, creating French cuisine that truly utilizes the nature of Niigata. I believe it is worth going to Niigata just to visit this place.
