Kimura Restaurant

The signature dish is duck hot pot, which boasts thick slices of duck and a homemade, gently sweet broth. Plenty of stewed vegetables are also used in this dish, which is especially recommended during the cold season. The duck broth and sweetness of the vegetables combine to create a deep flavor. The meat is tender without any odor, and the vegetables are plentiful. The final course is, of course, zosui (rice porridge). The zosui is excellent when rice is added to the dashi broth and tossed with an egg.

Located in Beppu City, Oita Prefecture, this 30-year-old teishoku-ya is a family-run restaurant with a warm atmosphere. The restaurant is currently run by the second-generation owner, who succeeded the first owner.

Yasuyuki Kimura has been honing his culinary skills since the age of 15 in the kitchen of a cargo ship traveling around the world. He made the transition from sailor to chef, and after training in Osaka, he opened "Oshokujidokoro Kimura" in Beppu. He serves dishes that make the most of local ingredients in his own unique style that incorporates cooking methods from all over the world.
