The broth of the motsunabe is soy sauce-based, with a light aftertaste that makes you want to drink it. It is filled with plenty of garlic chives, bean sprouts, and cabbage, and you can also enjoy parts like senmai, akasen, and tecchan. Even when it reduces, they will add more broth, which is great because it doesn't become too strong in flavor. I also appreciate that they ask if you want garlic added. The beef tongue sashimi is rich in flavor, with a smooth texture, and the balance of thickness and chilliness is exquisite. When finishing with champon, they serve it with garlic chives, allowing you to enjoy it pleasantly until the very end.
