The base soup is made based on the Hakata Mizutaki method! We carefully finish it to bring out the elegant and rich flavor of chicken to the fullest. Handmade daily with great care and effort.
Kaeshi (homemade mixed soy sauce) is made by blending several types of premium soy sauce selected from all over Japan, from Hokkaido to Kyushu, along with kombu and mushrooms, and letting it sit for a week day and night.
Under the cooperation of Mikawa-ya Seimen, the types of noodles are changed for each ramen menu, including mixed noodles and tsukemen. The taste of ramen varies greatly depending on the boiling time and how the noodles are mixed. At most, we use six types of noodles for six different menus.
