The quality of the ingredients and the techniques that enhance them were all wonderful. The background music, which at first seemed out of place with the restaurant's decor, was actually pleasant for me.

Katamachi, Kanazawa City Located at the end of Katamachi, closer to Nagamachi. Fish skewers Hina! It's been 2 years since my last visit! It's been a long time, Ryo-chan😅. (1) Wajima thick mozuku seaweed in buckwheat broth. 2) Sogen Junmai Daiginjo "Doubei-Iraoi" Nama-zake The sake is made by hanging it in a bag and waiting for the sake to fall drop by drop without applying pressure. The sake is then hung in a bag and allowed to fall drop by drop without any pressure, We were treated to a very precious sake 🍶✨! The aroma is mellow and the taste is deep. ❣️ This sake is amazing! This sake! (3) Isobe mochi (rice cake with flat clams) Tokushima bamboo shoots and Noto beef! Noto fugu milt and unotan steamed sushi 4) Tempura of firefly squid, asparagus, and fava beans from Namekawa, topped with dried squid Sashimi Barracuda, tuna, flatfish, cherry sea bream, sea bream, flat clams Button lobster Noto fugu, Noto 115 Noto beef grilled over charcoal with tempura of butterbur's leaf and ascetic's garlic 5) Manzairaku Daiginjyo Nama-zake (6) Wajima wild Dodoguro with wild Mitsuba bean paste (7) Tengumai Junmai Daiginjo (8) Meal, grilled eel skewer (9) Gorin Junmai Daiginjo Nama Sake Strawberry Daifuku The dishes used plenty of seasonal and natural ingredients! The combination of ingredients was interesting too, The sake that complemented the food was all delicious 😋👍.
