Go Sign Shokudo is a tavern in Hakata. The name sounds like a joke, but the food is authentic and delicious. You can enjoy the soft bitterness of the firefly squid and the crispiness of the fried squid is very nice. The wakatake (young bamboo shoots) stew was very tasty with a hint of sansho (Japanese pepper). Every dish is a must-have. Especially the soup stock is really delicious. The soup of the stewed pork is so delicious that I always end up drinking it all up.
