Harami is a part of the diaphragm located on the backside of the rib cage, and only about 2 pieces (approximately 2 kg) can be obtained from one cow. The Harami from Kuroge Wagyu has a refreshing flavor close to lean meat, with a rich umami and sweet aroma balanced by vibrant marbling, making it exquisite.
This is an even rarer cut than the hanging tender, which comes from the diaphragm of the cow and can only be obtained from one cow (about 1kg). The Sagari from Kuroge Wagyu is characterized by its fine texture and tender meat, offering a refreshing mouthfeel. You can enjoy the thick, rich flavor of the meat and the overwhelming tenderness concentrated in its elegant umami.
Please enjoy it with a special sauce and egg yolk.
