Harami is a part of the diaphragm of the cow located behind the breastbone, and only about 2 pieces (approximately 2 kg) can be obtained from one cow. The Harami of Kuroge Wagyu has a superb balance of rich umami and sweet flavor, woven into a refreshing taste close to lean meat with vibrant marbling.
This is an even rarer cut than the harami, which comes from the diaphragm of the cow and can only be obtained from one cow (about 1kg). The sagari of Kuroge Wagyu is characterized by its finely textured and tender meat, along with a refreshing mouthfeel. You can enjoy the thick, rich flavor of the meat and the overwhelming tenderness concentrated in its elegant umami.
