In Shiga Prefecture, the only place where the auction of Omi beef takes place is at the Shiga Meat Market in Omihachiman City. Hanaden ka-den acquired the 'purchase participation right' in January 2015 as a participant in the Shiga Meat Center local wholesale market trading, allowing them to participate in the auction for purchasing a whole Omi beef. Furthermore, they obtained a meat sales business license in February and opened an Omi beef wholesale store.
A-5 refers to the grading of beef by the Japan Meat Grading Association, where ABC represents the yield grade, and the meat quality grade from 1 to 5 indicates the marbling of the meat taken from a single cow. In the current grading system, A-5 is the highest grade, but it is evaluated based on visual appearance only.
