Motsunabe Kamehachi Bekkan

The dish features Omi beef offal, with a soup made from Kyoto's famous white miso combined with bonito and kelp dashi, simmered for a long time with beef bones. The fat and collagen from the Omi beef permeate the soup, creating a supreme motsunabe.

The essence of Kyoto cuisine begins with dashi. We use carefully selected high-quality kombu and meticulously chosen katsuobushi to create the best flavor. By matching it with Kyoto's delicate water and precisely determining the cooking time and temperature, we extract only the pure 'umami and aroma' of the ingredients without any off-flavors. It is clear and light yet has an overwhelming depth and rich aftertaste that spreads the moment it touches your mouth. This meticulously calculated dashi enhances the sweetness of the main ingredient, offal, and the fresh umami of the vegetables to achieve a supreme balance in the entire hot pot. Experience the power of authentic dashi, refined in Kyoto's Pontocho, and savor it with all your senses until the very last drop.

The essence that defines the flavor of Kamehachi's Kyoto Motsunabe is 'Kyoto's Traditional White Miso'. Compared to regular miso, it features a refined and mellow sweetness with deep richness. While it has a core that does not lose to the strong umami of the motsunabe, it gently envelops the flavors of the ingredients, offering an exquisite taste nurtured by Kyoto's history. It is not just rich; it achieves an astonishingly refreshing aftertaste. We deliver a miraculous balance that can be enjoyed without getting tired until the last drop and the final moment.

The rice is grown in-house in Takashima, Shiga Prefecture. It is pesticide-free natural cultivation rice, safe and reliable. Please enjoy it in zosui or risotto.
