Owner Yuki Nishizaki became independent in 2017 after 20 years of sushi training. The restaurant was established by the owner, a Michelin 3-star graduate who honed his knowledge and skills in seafood in Hokkaido, and the name of the restaurant symbolizes the "blessings of the sea" and "connection with people". Since its opening, the restaurant has continued to impress visitors with its carefully selected ingredients and outstanding skills.

Born in Shibetsu City, Hokkaido, he has about 25 years of experience in the world of sushi. He has honed his extensive knowledge and skills in seafood in Hokkaido, including training at a high-end sushi restaurant at the Toya Lake Windsor Hotel, and is a talented chef with three Michelin stars to his credit. He is now re-creating the ultimate in sushi with new ideas. He chose "Kaikai," an ancient word that appears in the Manyoshu, as the name of his restaurant to express his wish to deliver the bounty of the sea to the "land of people.
