Washoku Mendokoro Sagami Ichinomiya Imaise is committed to bringing out the true deliciousness of soba by focusing on freshly ground, hand-made, and boiled noodles. Every day, soba flour is ground using a stone mill set up in the shop, the noodles are made in-house, and they are boiled and served fresh upon order. Additionally, they enhance the flavor using carefully prepared dashi made from select ingredients, including aromatic bonito, which is made daily in the morning and evening.
