We proceed further into the hot spring town of Bessho Onsen. You might feel anxious wondering if there are any shops in such a place, but as you turn the corner, a shop sign suddenly appears. The interior has a feel reminiscent of a traditional Japanese house, and it strangely brings a sense of calm. The soba is 100% buckwheat without any additives, and I was also given an explanation that the taste varies depending on how it is prepared.
